The allergic reaction after consumption of red meats like pork, lamb, organ meats, beef, gelatins, and even dairy products occurs around 3 to 6 hours after the consumption. According to researchers, the delayed reaction is due to the fact that alpha-gal molecules take longer to digest and enter the system quite late.
